Hearty Protein Packed Lentil Soup

This soup is perfect to fill you up on a chilly day. It's super easy to make, cooks quickly and freezes well. I created it after making a making a somewhat bland lentil soup recipe I found on Pinterest. I love lentils but wanted a soup with more flavor and color, so this is what I came up with and I must say, it turned out bomb! You can make this with or without the added chicken breast. Here it is:
1tbsp Olive Oil
1 small yellow onion, chopped
4 cloves garlic, minced
2 small sweet potatoes, diced
1 15oz can black beans, drained
1 15oz can diced tomatoes
1c dry red lentils
31/2c water
2tsp chili powder
1tsp cumin
1/2tsp tumeric
Salt/pepper to taste
3 chicken breasts, cooked and shredded
Saute onion, garlic, and sweet potatoes in oil til onions are clear, add everything else except the chicken. Cover and simmer til potatoes are cooked through and lentils break apart. Add shredded chicken if you prefer and enjoy!
